I use special Jellysugar to make jam. Its two parts fruit on one part jam. Honey and lemon is up to own taste.

The trees grow here in the Netherlands, so you can find them in the wild.... I dont think they sell the chestnuts anywhere as far as I know.

Hi Yada, I dont really know. I mean I used special sugar that also has a gelling agent in it . So if you would use honey you would have to use something else to make it solid, also honey might have an over powering taste. I guess it would be an idea just to experiment with it, make a very small amount first to see if it works. I think the purpose of cooking them was really to dry them out hence the low temperature so it wouldn't as mould requires access to moisture to grow.
