This is a fair take. I've played through both paths several times, and overall, the Iorveth storyline has a lot more MEAT to it than the others. You feel better at the end, and it plays a lot more into the non human politics which we know Geralt from the books has gotten into a few dozen times. With Roche, you are bootlicking to Henselt, and then Radovid afterwards. That isn't Geralt. Geralt tries to remain neutral whilst helping those suffering, not perpetrating more issues, but its still great writing. Witcher 3 just doesn't have that and executes its moral decisions poorly. Example is in witcher 3, You SHOULD side with Sigismund Dijkstra when he says he'll take control. He's genuinely insanely smart, politically savvy, has been a reagent and spymaster, so knows how courts works. The guy is THE PERFECT solution, but instead, the game frames it in a way where you have to kill Roche, Ves and the others to get this decision. That's insanely stupid and makes no sense, because Roche will logically still work under Sigismund if he knew that he'd try to keep their sovereignty. Not even a emotion versus logic thing, because the conflict is forced, for no reason, to kill either side, when Sigismund knows from experience he cant just kill Geralt with a few guards. Compare that to Witcher 2. Iorveth sticks with you. He's a prick and a selfish person, but once you earn his trust, he is there for you, saving you i think several times during the story. Towards the end, he sticks with you as loyally as he would any other elf despite you being a mutant. He will trust you, he will speak up, and he will have that sharp tongue throughout. All of the story with him, and even Roche in witcher 2, has so much flavor to it. Then in witcher 3 we are robbed of Iorveth and forced to play only with Roche, meaning you are punished as a player for choosing one side, because CD Project Red didn't want to make a Scoita'tael storyline TL;DR: Witcher 2 is more engaging, your actions have short and long term weight. Both choices are great but Iorveth is the better one for a True Witcher.

That's an excellent way to express it, and I think you put very well how the choices feel different from the Witcher 3

I think both games are amazing, but even though I like the witcher 2 more, I think it would be hard not to admit that the witcher 3 has got A LOT more production value to it.

They shouldve fucking gotten Iorveth for the 3rd game. Iorveth is too fucking cool to just not be present.

There was a long(er) scoia'tael storyline, which several notes, map points and such things left in the files but it was cut due to time constraints. Theres even a Iorveth model in the Witcher3 files thats high quality. You can find it on Nexus mods Update: There's even a Saskia model, as well as leftover voice lines. Its so insane how much they wasted with this game.
