That’s a great method! Pulling at 150°F and letting it rest to reach 155°F ensures a juicy and perfectly cooked turkey breast. Resting in foil also helps redistribute the juices for maximum flavor. Thanks for sharing your technique

I stopped watching the video after you said the sea salt and black pepper really bring out the natural BEEF flavor. Those are PORK ribs.

Yes you are correct. While I am using the orange shaker bottle which is a bbq rub those are pork ribs. In this recipe I didn’t use any seasoning other than salt and black pepper. Therefore I didn’t have any footage of using a bbq rub.

@@Mazel_Tov_888 I totally agree. Bad smoke can really affect the taste of your meat. When I first started I would put my meat on the smoker as the charcoal wasn't quite ready. I would get that dark gray almost black smoke. I didn't learn until after a few bad cooking sessions that I needed to wait for that thin blueish smoke.

I like beer so I learned from not paying attention and when I put it on I had the thin blue or almost no smoke and worked out great. I cook on a weber kettle with the slow n sear and a offset stick burner

Doesn't it just means the juices escape the meat? If you weigh two steaks straight after taking them out of the pan, cutting one straight away and not cutting the other, both will weigh the same after 10 minutes. The difference is that all your juices are on your cutting board rather than on your plate

You make a solid point! When cooking meat, the heat pushes juices from the center to the edges. That’s why resting is key! During that time, those juices flow back into the center, giving you a juicier steak when you slice in. Sure, some juices might end up on the cutting board, but resting helps keep more of that tasty goodness inside. So, while you might lose a bit, it’s all about keeping as much as you can. Good idea on the two hooks. I have cooked ribs many times on my Pit Barrel just using one hook per slab, so I will have to try your rotation method. Also, a good time to add the apple juice. Good video - Great job! And those ribs looked GOOD..

I'm SO glad that you liked the video!!!! I came up with the double hook method just by messing around. From previous cooks, I had noticed that if I left the same end always facing down that it would become over cooked. Through a little trial and error I was able to come up with this idea.
