Ye bahut sare states mein khaya jata hain. Banane Ka tarika thora alag hota hain har state mein. Bengal, Assam, Orissa, Nepal… aise aur states hain.

Ye dish sare coastal belt kay states/ rice eating states mei khaya jata hai.... Basic tariqa same hai jisme bhaat ko overnight pani me rakh diya jata hai aur agle din usme aapke taste kay hisab se cheeje milai jaati hai.... Jaise aloo fry, khaskhus, fish fry, etc

I kept the leftover rice in room temperature with little water for 16 hours and then added the curd and more water next day.

No Pragati it will not. That’s how fermentation works and it’s great for gut health. It will give little sourness and that’s what we want. Like how we do for Dosa/Idli.
