Do you have the BBQ Mods baffle plate installed? Or does the bread pan help with the even heat?

@@joeljenkins9424 I didn’t go with the baffles. I’ve heard they work good. We grabbed the insulted cover which helps and I think the bread pan helps keep the temperature steady across the grate.

The flow is not reversed with the bread pan - it still flows in the same direction, it's just kept lower before it exits, to keep it even across the cooking surface.

@ourlifeinwyoming4654 you gave me a idea with a piece e of sheet metal. I have a old school new braunfel smoker. If I put it at the entrance of the heat source. The sheet will force heat down and the pressure will push it across. Something like a half baffle.

I just watched a video of a man exp with smoke stack height. He ended up using 3 heat probes & balancing the temps between them getting within 5°on all 3. 16in stack from the elbow. & Don't remember if it was top or bottom of elbow though. He also had a diverter plate for the smoke coming out of burner box.

I should probably make a video showing that. My smoker is a "Lone Star Grillz" 20 x 36 offset. It burns wood or charcoal, or both combined. I run wood and keep the temperature at about 225 - 245. Once I get the brisket seasoned, it goes on the smoker until I like the color and it reaches a temp of about 160 - 170. Then, I will wrap it in foil with a temperature probe inserted. Then I wait for the temp to come up to 200 - 203. Then - very important step, I let it rest while it's still wrapped in foil for about 2 hours before I open the foil to slice and serve it. I let it rest in a cooler to hold temps. You can also wrap it up in a couple of towels to hold the heat as it rests. Please check out my video recipe for the rub I use. The theory is to keep the smoke lower in the smoker before it exits. It helps keep it even across the cooking grate before it exits. We foudn that it helped a good bit. Congrats on your new smoker!

Yup - but, I’ve finally given in - had little choice - and I’ve got some help. So many things I used to do, but now I get some help. Our summer happens pretty quick so we have to get on it. One thing I’ll probably always do myself is the critter control.

It’s $350. Take a look at a high quality offset. You’re looking at $1200-$1500 minimum for a similar sized rig. Better to buy this and mod it if the later is cost prohibitive or you are new to smoking.

No - I think it works fine. I'm just one of those tinkering types that's always tweaking things. But, there's some guys on youtube cooking some amazing BBQ on these that are factory stock. It's an entry level smoker - the more money you spend, the better the smoker - most times. But this is a good one to get started on. Our son took possession of this one and he's loving it. Not too bad. Some ash can get between the bricks, but they can be removed and cleaned pretty quickly.

Woahh... That's insane! That's called a 'shelf' or 'arcus' cloud and they typically form on the leading edge of very well organized thunderstorms. They're not terribly rare, but they are incredibly beautiful. I have been lucky enough to have seen a few.
