Different temps and grind size depending on roast level and regions. Some work best in French press some work better pour over. What water you use as well. So many variables not to mention water to grounds ratio.

It cannot be called Feta unless it comes from specific regions of Greece but those commercial brands from whole foods and trader Joe’s are not great. It’s best to find a local Greek market that has imported Greek cheeses.

The bacteria which make both Epoisses and Limburger are the same bacteria which are responsible for sweat odor. Both were created by French/German monks respectively. I have a theory that the monks just added their sweat from armpits to the milk)) But anyway, both are seriously delicious. I fell in love with both from a first bite. My Epoisses was a month past best before date, so you can imagine the strength of aroma and taste. Thank you for the video, I enjoyed my Epoisses while watching it!

Definitely has been the most challenging cheese for me to enjoy. I cooked pork in garlic coffee honey glaze, paired well with Willoughby. Willoughby is a somewhat umami cheese, but the savory and salt complemented the sweet acidic blend of the glaze. I don't mind the smell at all next to the smell of pork.

Please do a review on skippers liquorice pipes.. thats the one with the red beads on them. My favorite~ please purchase them online as they are hard to find. Im not sure if you can buy them singularly but if you buy the pack of them i guarantee you wont be dissapointed and you might even be happy you bought the pack as they are very addictive
