You dont put your steak out for 30 min for it to get to “room temp” you get it out so the moister dampens so the surfice does not “boil” because of water vapor on surfice.

Every chef and every steakhouse cook will tell you differently. Room temperature assures that it all cooks at the same rate. If it’s a thick steak it needs to sit out much longer than 20 or 30 minutes, but room temperature is a must if you want it to cook properly.
