We just got back from a weekend trip, and the nuggets I batch-cooked before we left came in so handy. Unfortunately, we’ve already eaten all of them 😆. Sweet pea keeps asking to make cheese crackers, and I can barely keep up! I always double the batch so we have dough ready for tomorrow. We had so much fun picking Brussels sprouts, and it even got my kids excited to try them! Sweet Pea loved the sweet and spicy flavor, even though she was gulping water with every bite. I guess it wasn't too bad that I overcooked those beans. You can use canned beans for this recipe, which I normally do. My favorite beans are white beans, but the recipe works with black beans or even chickpeas. My kids absolutely love these muffins! Full recipe : WhiteBlankSpace.com

We're lucky to have a waterpark just 10 minutes away, but the food there is really meh... So, I packed a delicious pasta salad for myself (ingredients below). For our first visit of the season, my kids indulged in treats from the food stalls. Next time, I'll be packing food for them too! Pasta Salad Ingredients makes 4 servings * 2 cups cooked corona beans * 4 oz chopped feta cheese * 1/3 cup chopped sundried tomatoes * 1/4 cup chopped cornichons * 8 oz pasta shells, cooked * 1 tbsp chopped fresh dill * 1 tsp dried oregano * 1/4 cup olive oil + plus more to taste * salt and pepper to taste

My daughter grabbed a big tub of vanilla ice cream when we were at the grocery store together, and suddenly I was craving ice cream sandwiches. I made the mistake of freezing the corn tortillas and microwaving them to defrost. That made the tortillas brittle and prone to breaking apart. Still, the dish turned out delicious. If anyone has tips on how to keep corn tortillas soft and flexible, please let me know! I like to add cauliflower rice to beef tacos to make them lighter and incorporate some veggies for my kids. Since they don't eat salsa yet, I served the tacos with avocado for them. A few weeks ago, I cooked up a batch of nuggets and realized we were out of ketchup. So, I finally tried making ketchup at home. Honestly, if I had known it was this easy using stuff I already had in my kitchen, I would've tried it way sooner. After playing around with the recipe a bit, I actually think it tastes even better than the ketchup you get at the store. serving: 1 cup ketchup * 1 (6-ounce) can of tomato paste * 1/3 cup cider vinegar * 1/4 cup honey + more to taste * 1/2 tsp yellow mustard * 1 tsp salt * 1/4 tsp onion powder * 1/4 tsp garlic powder * 1/4 cup water * (Optional) 1 tbsp balsamic vinegar 1. In a saucepan, add the tomato paste, cider vinegar, honey, yellow mustard, salt, onion powder, garlic powder, and water. If you like, add the balsamic vinegar for a richer flavor. 2. Mix everything well to combine. Then, bring the mixture to a simmer. Partially cover the saucepan with a lid to avoid splattering. 3. Let the mixture simmer for about 10 minutes, stirring occasionally. 4. Pour ketchup into an airtight container and refrigerate. Your homemade ketchup will keep well for up to a week.

Did you know that if you freeze tofu and then thaw it, it gets this cool sponge-like texture? Just press out the extra water, and it's ready to soak up any sauce like a sponge. I used our family's favorite sweet and spicy sauce for the tofu (and tossed some in the noodles, too). After that, I coated the tofu cubes with potato starch and fried them till they were crispy. It turned out sooo yummy! I'm calling this "Twice-Transformed Tofu." I have the full recipe on my blog and a quicker version. WhiteBlankSpace.com You'll see two recipes in the blog posts. p.s. The noodles I used is Korean glass noodles.

Remember the homemade flatbreads I shared last week? I turned them into easy homemade chips! You can use your favorite spices and store-bought pita bread for a shortcut, too. Spice mix 1 tsp garlic powder 1 tsp onion powder 1 tsp ground paprika 1 tsp salt 2 tbsp nutritional yeast 8 flatbreads olive oil 1. Preheat your oven to 425°F. 2. Grab your flatbreads and stack them up. Brush olive oil on the top side of the flatbreads. You only need to oil one side because the bottom will soak up some oil when they're stacked. 3. Sprinkle spices on the oiled side of the flatbread. 4. Cut the flatbreads into smaller triangles. 5. Lay out the pieces on a large baking sheet in a single layer. If you have any leftover spices, sprinkle them on top. 6. Bake for about 9-10 minutes until they're nice and crispy.

These panko-crusted chicken nuggets are super crispy and yummy. I added Parmesan cheese to the coating for extra flavor. While I usually prefer shredding my own cheese, store-bought grated cheese works better in this recipe. (unfortunately, I forgot to grab some!) Getting that extra fine grating at home can be tricky.
