I've got News for you all. You can NOT overcook orzo pasta. I tried it purposely b/c I had recent oral surgery that temporarily keeps me from chewing solid foods. I cooked it for 30 minutes in salted water . . . then I drained and transferred it into my pasta sauce and simmered it for over an hour. At the end . . . it was just as firm as it was after the 12 min recommended cooking timed. So . . . for you absent-minded cooks who might forget it on the stove . . . No Problem! For others that share my predicament . . . Not So Much!

If you roll it like that syrup will not get inside enough, it will be tiny bit more dry than traditional baklava. It is still good tho, It is called "Sarma Baklava" in Turkiye.
