I like brother's personality but he made a few erreurs. Like not putting a plate to the side to taste. Nothing that can't be worked with in this case. He reminds me of a hard knocks chef. It was earned the hard way. Like a stint in prison. Really like his naturalness.

Only other thing i do is boil the shells and add shrimp broth to dish. Not water
