You will need: 1 medium pumpkin or in my case I used 2 medium butternut squash ( I have baked using both and they all do and taste the same) Method: 🍁 Preheat oven to fan 160°c and line a baking tray with baking/ parchment paper. ( My oven is fan assisted so adjust to yours accordingly) 🍁 Wash and pat dry the pumpkin/ squash and cut in halves 🍁 Place pumpkin skin side up on the prepared baking tray, then place in the oven and bake until the pumpkin is easily pierced with a knife or fork. Mine took 1 hr. 🍁Remove from the oven and allow to cool before handling . scoop the flesh out and place in a blender and blend until smooth. 🍁Pour the smooth puree in a cheese cloth or a sieve and allow the natural juice to come out so that you remain with a silky smooth purée. 🍁 Your puree is now ready to use and can be store in the fridge in airtight container for up to 1 week or up to 3 months in the freezer. This can be used in bread dough, cake, waffles, pancakes, muffins, pumpkin pie, pumpkin latte.....
