to answer to your question how they organize, how everything its in his place this is the answer. whenever a choreography its put in place the guys who organize it often cooperates with the staff of the stadium. they let them to go and put the signs in place on the seats hours before the game starts, and when you get on the seat you will find the sign that you need to hold up when the moment comes, often theres somebody on the bottom to give the tone when to do what to do and often you will receive instruction on a paper .so everything comes in place when the time comes. these guys calculate everything they get the plans of the seats and numbers so they can figure it out where to put all the colors and everything, this is how they manage to make it look so good,. the rule is pretty simple : if your seat doesnt have a sign or instruction you just dont do anything.

also these shows are organized by the home fans of a team, you will almost never see an away team get that show cuz the home team wont allow it by denying entrance in the stadium before the game starts (i mean hours before so they can organize the show). the only exception when both teams get choreography its when a derby happens like ex : inter milan vs milan.
