Hello! I gave the radish salad dish a try. It was too salty and made a note not to add the fish sauce in the next try. I added more sugar and it tasted great. It was a hit! Later, I read the other comments and found that the recipe was to be corrected - it's supposed to be sesame oil instead of fish sauce. I did wonder why sesame oil wasn't in the recipe! Slow brains on my part. Then I re-watched the video and of course I missed the sesame oil. Duh! BUT, my family loved the dish anyway 😅

Hi. Pat here. It turns out, probably nothing. The boiling water is at a high enough temperature to do the job without first baking the baking soda. At a certain temperature baking soda becomes more alkaline. That’s the goal. I don’t remember the chemistry exactly. If you try the recipe, skip baking the baking soda and you’ll get the same results.

I am having a bacon and bagel party with my family tomorrow and will be making several batches of your bagels for this party. I am teaching my 16 year old grandson how to bake bagels and he will be helping me with this endeavor. We used to make the bagels using the bread machine, although that way is a lot quicker they aren’t as good as your recipe. So glad I stumbled on to your you tube channel.

I let the noodles sit in boiling or hot water until the right consistency and then drain well. No need to do anything else to the noodles. You continue with recipe to cook the noodles. Enjoy!

I made your bagels. They are so good. My problem is my bagels came out flat instead of puffy can you tell me what may be the problem. My yeast was fresh as I just opened it that day for the bagels. They didn’t look like yours but they sure tasted good.

Probably over proofed. Use room temp water, shorten the first rise. If your kitchen is warm and they rose well overnight, go from fridge to boil without letting them sit out for an hour. Maybe cut back on the yeast as well.

Tried another batch of your bagel recipe this morning with the advise you gave me yesterday. (Thank you for responding back to me) I let them rise only for a half an hour and instead of an hour and they came out perfect! Which is good cause I baked them to bring to my chiropractor who is retiring and wanted to give him something to remember me by. I usually make my bagels in the bread machine but I wanted to try something different and your recipe inspired me. I baked two dozen of your bagels yesterday for my husband to bring to work. Although, they were flat they were still delicious. My husband came home and told me that one of his co worker told him that the bagel was chewy on the outside and soft on the inside and that he didn’t need to put it in the toaster to get the crunchiness. Plus your bagels taste so much better than the bread machine bagels! So glad I tried your recipe I will be making them again.
