temperature probe.... so what do you stick it through to keep it off the bottom? Do you often use a temperature probe, or just while experimenting.

No just for testing. I used a potato to keep it off the bottom. I use an instant read for testing final doneness.

Good recipe. I've used it 10+ times. I do it in the oven in my ceramic Dutch oven. When they're done, I put the ribs on a wire rack to drain them, and put them on the grill with some Q sauce and flip and brush until the sauce gets gummy. Taste is great

Hands down the best, most fool proof way to cook a turkey. Ive over timed mine last year and it still came out jucy; tender, and delicious . Ive cooked 10 turkeys this way and have never been disappointed. Ps. I learned this from a friend , who at the time was homeless and hadn't changed. So thank you allen, lumpy, dobs.

Hey guys, great idea. Question, the campfire burn out makes it safe to cook with the galvanized metal? I always thought it was toxic. Lol, too bad about that smell-o-vision tho. The bird looked awesome.

when you heat the ZINC coated trash can with a direct fire, the ZINC becomes airborne and is deposited on your turkey where you consume the HIGHLY TOXIC ZINC, in a few years the experiment will be considered complete and the health problem will be available for review.

Fantastic recipe guys! I have cooked this in my Dutch Oven numerous times for my buddies when we go out off roading. I have never heard any complaints. Most want to know what I did to make this. By far one of my favorites to have at camp or at home.

People get this anal about the exact math on the coals? Just keep it around the perimeter like you said and check the food on occasion/rotate the oven. Over analyzing.

Ive been doing this for years. I rub mine down with butter and season it with Tonys cajun seasoning for a bit of spice. Best way to do a turkey is in a trashcan!

I have done this and put some smoke chips in with the turkey (around the bottom of the Dutch oven) the heat eventually lights the smoke chips and adds a little smokiness.
