Impressive your playing it in standard tuning! Keith plays it in open G obviously, and would advise beginners to follow that route, as it is far easier. Keep up the great vids!😊

I don't think he is playing in open G. The C chord is played as a traditional open chord with embellishments. The root is on the 5th string, 3rd fret. If he was playing it in open G, that would not be the case.
