Quick question, I live in Florida and don’t have access to pike, carp or any of the northern fresh water fish. What are good substitutes for the south?

Great question! I lived in Florida too. I have prepared gefilte fish using fresh gag grouper or snowy grouper. It works well. The key is to use fish with white flesh and mild flavour. I’ve also used frozen cod and bought a whole fish at a supermarket in order to use the head. Skins! Real gefilte fish should be wrapped in skin. In the most rigorous variant, the final product should imitate an entire fish body, but this is something I never tried.

You are absolutely correct! Back in Eastern Europe, the gefilte was stuffed back into the skin and shaped like a fish. 👍🏼

Very good question! Yes, there are several reasons why I prefer a wooden lid when possible, especially for Asian cooking. This is an antibacterial, carbonised cedar wood lid with a bevelled edge. It’s great for cooking and steaming simultaneously for speedy cooking. Steam rises to the lid and drops back down into the skillet in liquid form, which prevents solids from sticking. The lid is lightweight and a poor heat conductor so it is also possible to lift the lid with bare hands. 👌🏼✔️

I think that this dish is called 'Tagen Nosrani' ' because it literally means 'Nazarene Tagine' (or Tagine from Nazareth). 2,000 years ago Jews from 'Nazareth' ' (town in ancient Israel later called "Palestine" by the Romans). Since the beginning of Hebrew/Israelite/Jewish history there was migration back and forth between Egypt and ancient Israel/Palestine by Jews in the middle east all the way up to the 1950s. Because Jesus the beginner of Christianity was from Nazareth Christians in the middle east were often referred to as 'Nasrani' (Nazarenes). Originally a 'Nosrani' was any Jew who originated from 'Nazareth'. I
