Sure! As long as it is sealed tight so the pepper can continue to steam/cook. That will allow the skin to peel off.

I found this video looking for a recipe for poultry breakfast sausage. It worked, but simce the mixture looked a little runny, I added bread crumbs to use as a binder. I'd estimate about a half a cup. They tasted great and turned out perfectly. I think I had my skillet too hot at first, so I baked them in the oven at 400 for 15 minutes after to make sure they were done all the way through.

If you like it with breadcrumbs, that's great. They are not needed, though, the protein tightens up when it cooks and it is bound together.

Not really, they add lots of great nutrients. If you're looking for weight gain, there are lots of resources available. Be sure to look for a credentialed Registered Dietitian. You can also find recipes on my site, chefabbiegellman.com - you want nutrient dense items in larger portions, so think nuts/seeds/nut butter, avocado, lean protein, yogurt, whole grains, etc. A smoothie with fruits, veggies, nut butter, and avocado may be helpful.

I work with low-income families and am trying to encourage them to use more whole wheat flour. Where it might be too costly for them to buy a bag of whole wheat pastry flour do you have any recommendations if they only have whole white wheat or whole wheat flour to use?

Instead of pastry flour, they can use 1/2 white flour and 1/2 whole wheat flour. That should work well.

The wrapping part actually helps the pepper continue to cook/steam so it is recommended. If you prefer not to use plastic wrap, foil or bees wrap are both options.

Aye, the skin is still holding the heat and steam in until it cools and is washed off, wrapping may possibly make the process a little faster but maybe not. Definitely possible to just put your blistered peppers in a covered bowl instead of wrapping them in anything.. This technique is definitely older than cling film and tin foil

Actually, there are many types of pesto! You can use different nuts/seeds or no nuts/seeds, cheese or no cheese, basil or another herb or even kale or spinach! "Pesto" is a loose guideline, feel free to play around as you like.

Can I substitute the flour for almond or coconut and the milk? I know that oats fiber will give the non gluten flours the soft and moist of wheat breads, or at least close enough. Flaxseed is one of my favorite replacements for wheat.

This recipe uses a flour that contains gluten, so you cannot swap it out for a gluten free flour 1:1. You could use a gluten free flour that is labeled "1:1 swap" because then it contains all the components necessary. However, the final product will not be the same if you use almond flour as a 1:1 swap.

Hi there. You can skip the sugar, however, since it is a pickling recipe it requires the salt. It is what actually "pickles" the veggies, makes the brine, and it is what keeps bacteria from growing in the brine.

Since poultry needs to be entirely cooked through to a certain internal temperature, I would not recommend using other meats. Since other meats - beef, lamb, pork - would likely be overcooked in order to get the chicken to the appropriate temp

I thought you aren't supposed to cook tomatoes in a cast iron skillet? I made tomato sauce in mine and it tasted metallic.

If you have a properly seasoned cast iron skillet, you can use acidic items like tomatoes. You may need to cook more in yours and make sure it is seasoned well.
