What I did here is actually play each instrument trying to imitate the sound of the original song. Obviously in the original song they mostly use samples from previous R&B records instead of a "real" band playing bass, guitar, keys, etc. Unless you have some kind of software that can eliminate the voice tracks, or you are a DJ yourself and can replicate the original mix, I don't see any other way to make this song instrumental other than actually playing it.
