I am new to your channel and I have already become a fan. Also, I understand now why the rice Uzbeks make is so incomparably delicious.

What do you do when you get to the bottom half of the pot where it's all fat and oil? Do you still serve the rice that is oil and fat soaked? Do you drain the oil and fat? Never did see a video that showed this part in all of the rice pilaf serving, even the ones that are cooking in huge vats to serve the public.

Some people prefer the pilaf (osh) to be a bit oily, but if the oil settles at the bottom, it can be strained and used again for the next time." So no biggie😊

I guess it is one of the variations of pilaf. Sweet version. Interesting! We, Kazakhs, also make pilafs regularly, usually add garlic and dried tomatoes 🍅. Yummy!

why you don't crush /ground the pepper ? you can feel the texture doesn't smooth.
