Sorry, that's an internet troll job you read. "Huckle bearer" isn't a real term, and never was. In fact, it didn't even exist until it was made up and posted on a message board in the late 1990's. You can only find it on the internet, and only on Tombstone-related topics. Nowhere else. He 100%, "no doubt about it" says "I'm your huckleberry". Confirmed by the script, by the historical consultant for the movie, and by Val Kilmer himself. He wrote about this in his book, titled "I'm Your Huckleberry: A Memoir"

The freakin production, cinematography is damn gold. When Doc says “I’m your huckleberry” how the sun frames him in every way, almost makes him appear to pop out of the screen. I know I’m not articulating my thought here very well but if you go back and watch it again he seriously appears to be almost supernatural
