Welcome to my channel and thank you! The mold I used in the video is labeled as 10 cups (2400ml) on their introduction page, but it can hold up to 2700ml.

Thanks for making this video. I have used your method to make paste from all citrus, and used the paste in place of zest in biscotti recipes. Citrus paste is commercially made and sold to bakeries, so it's nice to have home-made when you control the ingredients used. What I learned about making it with citrus other than oranges is that I didn't have to add any extra water to the result in order to blend it in a VitaMix. I also used a much larger pot so I could get a more vigorous stir while cooking with the sugar. However, limes have to be pureed before cooking, or their peels will harden too much. Cooking time was basically the same as with the others, just with the final product coming from the pan instead of the blender 🙂

Thank you. Sources point to the origin of Doogh as Persia (the earliest source dated back in the late 19th century) and Ayran as Turkey (the earliest description of such word/drink dated back to 1000 CE). Regional eats have similarities but sometimes it's hard to know the true origin of a specific type of food/drink even with written records.

Theoretically, you can, but I find lemon is usually harder to blend so you will need to add water to smooth it out. Even though it ends up a smooth paste after blending, the texture is totally different than what's made of orange.

There are many variations outside of Thailand, even in Thailand. As a rule, some key ingredients are not supposed to be changed, but it's perfectly OK to replace the shrimps or even dismiss them if some people are vegetarian or opt not to have shrimps.

The highest temperature you can get. Most home ovens can reach up to 250 degree Celsius (500 degree Fahrenheit) which this recipe uses.

This looks so good! I'm wondering if I can use even less sugar. What would happen to the thickness, or end result?

50% of sugar is the lowest I've ever experimented to have a jam consistency and fruity flavor. % of sugar depends on the pectin level of the fruit. Strawberry naturally contains low pectin so I wouldn't suggest going lower. That said, it's not unlikely because the water will eventually evaporate over time and the sugar will become syrupy (or harder), so you may be able to get something thick (or hard), but it's not because of the pectin and it won't taste like fruit.
