I liked it. Wife needed a bit more salt. I added some hot sauce and couldnt stop eating. Also, id recommend putting some red pepper flakes when cooking. I did and it was divine.

The starch is just there to make it crispy; cornstarch usually doesn't make it as crispy as potato starch, but it shouldn't be too different.

Did you use organic sugar? I have been looking everywhere to learn about thai sugar manufacturering to see if they use bone char/ cow bone ash, to remove the brown color from teh sugar ....and thailand does use bone char

Great recipe! I put the mixed batter in the freezer for a few minutes before frying. I substituted rice vinegar for apple cider vinegar, it was all very good

What are soy granules? I’ve never heard of them, they look like processed soy crumbles, something that might be in the vegan substitutes section of a US grocery store.

Soy granules are often sold in the U.S. as TVP (textured vegetable protein). 🙂 Vegan meatless crumbles are sometimes made from pea protein, which is better for people with soy allergies. Trader Joe's used to sell it, but recently discontinued, so I've had to order a different brand online.

i have a question about the tamarind paste - i know that there's a difference between indian tamarind paste (very strong, sour concentrate) and thai tamarind paste (lighter, more runny and diluted). by the looks of it this seems to be closer to the dark concentrate. can somebody confirm, or tell me if the thai paste would work as well? thanks!

The tamarind paste in the video is homemade from tamarind pulp. While, yes, the Thai tamarind paste is typically more diluted, it still should work as well in this recipe.
