I think theoretically yes there's probably more than one way to do it. Here's what comes to my mind first and typing via phone. I'd have to go in and test out to give you a definite answer but read this over and give it some testing on your own to start. Is it a MSP or a regular pick list? If it's just two options you should consider making it a pick list and then the values will overwrite as they update. As an FYI, MSPs are a pain and I think strayed away from because of this type of stuff (people prefer to do overkill on check boxes instead of a MSP from the forums I've read. Also MSPs are terrible for reporting, not just flows which is why I think this video ends up being so helpful lol) As for actually doing this, the extra custom object is throwing me off a bit, so definitely play around in sandbox if you can, but here's my thoughts on doing this the standard way is it would apply in my video... you can create a filter for an and if condition so when a records field is updated to volunteer AND if former volunteer is already selected, then you continue with that branch of the flow and then remove it by using something like a Substitute expression in your data text variable. That's where SF stores that data we used to basically re-tell it what values to keep like in my video example. In your case we'd need to tell it what values to keep or remove (specifically substitute is what you'd be looking for which is why I'd try to use that in the formula). Because then what would happen is it'll just take all other MSP selections to keep when you loop through it, but then substitute Volunteer for Former Volunteer. I'm not 100% sure if it's possible, I've never done this specifically before. It's definitely worth a post to trailhead if you play around and can't get it. Hopefully the thought process (which could be wrong sorry😂) atleast gets your creative problem solving juices flowing for this haha

I like to share this bc this was something I had to learn the hard way but moving forward I'm always aware of it now: "Why are multi select picklists bad in Salesforce? There are many reasons for this. First of all, multi-select fields have many quirks that can make them difficult to use and potentially inhibit your ability to do specific things in the future. I created a comment on the first reply, went to edit it and it said it returned an error and now I don't see my comment, so I'm sorry if this is the 2nd comment you see from me. I found that very same link and it helped me out a lot! Along with your video, it worked well for me. One thing that was a bit confusing in that StackExchange post is that the formula needs to be within a new formula variable (not assigning the text variable to this formula). Get Records is simply the basic building block for most flows to identify and fetch which record you actually want to do something with or pull data from. Besides the basic core functionality of fetching the record(s) that will allow you to refer to in the flow, Get Records element will be useful for the main things you can see when you're using it such as filtering with condition logic/requirements, Sorting records, how many records to store, and how to store record data (mainly performance/speed related if using lots of flows and data). If you watch this other video I posted you can see how it can be useful in one instance: kzbin.info/www/bejne/h2XPeGSXqtOVr5Y In this case, the flow trigger is when a CAMPAIGN MEMBER is created, BUT I want to access the CONTACT record related to that campaign member, so the Get Record element will allow me to do that.

The record that triggered the flow can be referenced with the element I used "Update triggering Record" in step 2 of the flow. If you notice in the example I said before in my last comment, that one needs the Get Records since I want to get the contact record RELATED to the campaign member. In this case I don't need to look up the record because it's the triggering record I'm using/referencing. Make sense?

@@everettminer yup I understand that. I created a flow the other day though where I was updating a related record, and I was able to use the Update Records element without the Get Records element and it still worked. I guess that’s why I’m confused

@@Talk2meGuce I guess I'm confused too then 😭😂 what type of record was it? Because I believe I was unable to do this for campaign member and contact which is why I had it set the way I did. But either way, it's 100% useful for choosing how you'd like to store fields and assign variables etc
