Laurel leaf is good for lechon paksiw. When the meat is cooked, you throw in new garlic cloves. You don't fry the meat-- you let the liquid reduce and when the meat starts to dry out, it will fry in its own fat. That's the best adobo. No need for anato seeds-- the soy sauce will give the color
