@Raver_S_Thompson it depends. There's bonito hondashi, and kelp hondashi, and there's also a mix kind as well.

@ looking at ingredients and your right. Not all instant dash the same, if you ever come across it check yamasan Kyoto uji stock packets. Has a grip of all dashi ingredients, kombu, bonito, whitefish etc.

Can I try the recipe with thin straw pasta? Unfortunately, the noodles we have in our country are not the same as all the ones I see in many YT videos. We only have the curly ones.

@carpenaum yes, there are lots of similarities between pasta and ramen noodles, so it might look different. But, taste shouldn't change all too much. Sometimes, we have to use what is available.

I appreciate your nod to instant noodles as being valid in their own right. Really good restaurant-quality ramen is probably one of my favorite things in the world, but sometimes the instant stuff is just what one needs! Edit: this video is delightful all the way to the end. There's something kind of cozy about it somehow. Also I feel encouraged to try making my own ramen broth! Thank you! :D

Yep, easier for me to use the rice cooker than the sous vide machine for small meats like this pork belly. Takes up less space as well.

yeee haw, Slap ya' Mama is good on fries in lieu of salt... then dipped in a slight amount of Dukes or Hellmans. I'm fat, trust me. The Tony Checheries is nice as well. Green can if I recall correctly, the Commissary usually has it
