Deli meats should be transferred to the Food Saver bags and the unit will remove any air.

Hi Chef Logan, I'm from NY too, thank you so much for sharing this video:). Quick question I recently purchased a 16oz. bag of frozen scallops and found the muscle on several of them (not pleasant to bite into), should the muscle have been removed before packaging?

Yes...remove the abductor muscle prior to cooking.

What's the difference between kosher and regular salt?

Kosher salt is more pure, all sodium chloride, no iodine and it's generally more coarse. If all you have is table salt, use about 1/3 less.

Ham slices don't freeze well at all, even with air removed. It's because of the gelatin in the product.

I have a couple of questions. With smoking or dehydrating, why do you have to add cure if you refrigerate it? My other question is I have a frozen roast. Can I thaw it, make jerky and freeze the leftovers again? I do not have a vacuum seal.

I recommend crossed gymnastic ring plank rows. Crossing the straps adds draw across the body motion to the rowing motion. Pause 2 to 5 seconds at full contraction. I have progressed to doing these with a 20 lb weighted vest and have significantly increased my draw weight.

Ok I will ask, where do you buy it? You didn't leave any link or anything... Also, I have an issue with cold cuts staying fresh in my refrigerator. I don't know why, they thing works, just cold cuts do not stay fresh past like 3 days. Appreciate your time...

Buy a vacuum unit anywhere you can find a good one. The Cordless Handheld unit from FoodSaver is portable and handy, but you should also consider a larger unit. If you see a full-sized sealer for under $100, avoid it. But for around $150+ you have a few choices - FoodSaver, Cabelas, Weston...etc. Deli meats should be find after a couple weeks in the refrigerator and a year or two in the freezer.

That surely would work. But I wouldn't use much water. Otherwise it will taste bland.

soak overnight in ice water with a potato or two cut in half. The potato will absorb some of the salt and the water will dilute. Should be salvageble.

@@hazelarndt2204 Rinse, pat dry and air-dry in the fridge uncovered for a few hours first. If it needs more flavor after dehydrating, you can always add more.

Does the jerky really need to sit in the fridge for 24 hrs after the seasoning/cure or could it go right away in the dehydrater? I may have missed that step lol. Will it be ruined or still ok?

The cure and seasonings both need time to penetrate. It should still be OK, but the flavor will be more mild and you'll need to keep it frozen for storage over a week or two and refrigerated when not frozen. The cure prevents spoilage, adds to the flavor and makes the color of the dried jerky more appealing.

I just made a batch with the bourbon bbq and it came out wonderful. Flavor not overpowering the meat and super tender from my dehydrator. I'm gonna have to pick up that board and knife for sure!

Try some of the other flavors, too. My current favorite is the Jalapeno Blend, but that changes.

Depends on the size and age of the neck, but plan on at least 4 to 5 hours. Best to get it done a day or two ahead.

It usually takes 2 to 3 hours. Just make sure to crack the oven door so the moisture escapes. It's pretty much like making jerky, only with smaller bites.
