Excellent looking ribs and great content (new subscribers). I love cooking ribs on my drums and having that fat drip on them coals. The flavor from that alone does wonders for Ribs. @@TWells1015 thank you! It’s been a little trial and error for me. Just gotta make sure your sweet and heat all get along together. If your run has more kick, go a little more sweet and savory on the sauce and vice versa.

Let me give you a review, because I was honored to be at that event and was part of the group of people who thoroughly devoured that brisket! It was cooked to perfection. The meat was tender, nice fat marbling and had not one area of leathery meat. It had some really delicious bark and burnt ends. And his signature home made BBQ sauce took it to a whooooole elevated level (Good Lawd). Well done all around. I too would like to know the cost to purchase one for myself - it was that top notch.

No cap as the kids say. I was at the gathering. That brisket WAS OFF THE CHAIN. I typically don't eat red meat but BABY that was the best brisket I ever had in my life. The signature sauce set it off. NO CAP!!!

Is there an optimal internal temperature for the wings or do you solely monitor the cooking based on time? It’s been a while since I tried to grill wings and after that disheartening debacle I haven’t given it a retry. Although the charcoal grill I used didn’t have any control over temperature thus leading the wings being completely charred on the surface and virtually unedible. I suppose the cheapest grill and cheapest charcoal I could find gave exactly the taste of poverty I paid for.

@@nikoharma4593 Technically chicken is done at 165 but these were tempting right at 200. I normally go a little higher unless the breast is involved. It can’t go too much past 165 without drying out.

I had a pellet smoker for eight years, put out some amazing food, but I was always missing something. Smoke flavor. Finally get rid of it. It is good for chicken where a lot of smoke flavor is not required.

Pretty my means where I bit is the only meat that came off the bone. “Technically” fall of the bone ribs are considered overcooked. It’s one of the biggest debates when it comes to ribs. Lol.
