I don't recommend chicken for this method usually, it isn't a great finished product in my opinion. But beef usually does really well. It won't ever turn back into a juicy steak if that's what you were trying for but it should do quite well if you use it sliced thin and eat it "raw" as charcuterie or boiled and thin sliced as a sort of roast beef sandwich material, diced up in soups or with dry beans...

You could do the same thing with pine needles! They have very similar properties, astringent, antiseptic, and high vitamin C. It's a different flavor but still very nice! If you do use pine, I like to give them a rough chop.

That was very cool. My grandma would always make a ginger tea with lemon and honey for me when I was sick. She would sometimes put an herb called recao into it which gave it a slight minty and herby flavor. I wonder if this was just a Puertorican version of this. Edit: Recao is Culantro in English Also, I really appreciate that you included the vitamins that can be found in the pine.

Great question, I did cover a bit on pests in this follow up Q&A kzbin.info/www/bejne/j6e4m4x3lJV5a8k a bag can work, also starting in the late fall/winter when temps are naturally cool, flies tend to be a non issue. Smoke and cracked pepper are a few other methods often used to deter pests!

Honestly, in that situation, if I knew the weather was going to stay warm, I would make biltong or just thin slice and dry everything. Warm weather often means the meat will spoil before the salt can stabilize the cure. Under 60f for large salt cured projects, warmer than that, thin slices for quick drying.

personally, I dont water bath.....or put in the fridge. They are just fine on the shelf until they get consumed.....which doesnt take that long. I try to let them site for at least a month......but it is not unusual to start tapping into them after a couple of weeks.

The truth is that big pharma & corporations & companies all work together, & pay off doctors, hospitals, etc to keep this money making cycle going. With beef eye of round, After the salt is applied and ready for the fridge, should the meat be covered or uncovered as it cures in the fridge

An eye of round is quite thick, I would recommend doing more of a hybrid bine for that or just applying another layer of salt after a few days, it will take a bit more for the salt to penetrate all the way thru. I keep cures uncovered but covered usually but covered is fine as well, just note if you keep covered you will not see as much drying, everything will still seem damp but should still change color and firm up to the touch. @@apinchofpatience i have been adding salt and turning the meat once a day. I had covered it with tin foil and it seemed damp like you said. Thats why i wasn’t sure if i should have it covered or not. But it has firmed up. Thank you for your advice. Ill try one of your brines on my next go around.

Cell Phones lol I truly believe we are being monitored constantly, its just fairly noninvasive so far... My husband brought home an Amazon Alexa thing a few years ago... "She" was unplugged and packed off to the garage so fast! That thing was creepy as heck! I know my cell phone is not really much better, but my phone doesn't ask me to speak up when it's having a hard time eavesdropping on me!
