Hey Anthony, my father, who u know was a 60 year butcher taught me how to make fresh and smoked kielbasa, breakfast sausage, Italian hot and sweet sausage. The meats we used were pork "cushion meat" which is from the pork shoulder, it's extremely tender and we used pork loin trimmings which had some soft fat in them. About 50% mix of each, the fat from the pork loin trimmings kept the juices in the sausage. Pork butt is also a great choice. But it needs a little fat imo so it cooks real juicy. But ur way looks delicious also. Thanks for sharing, We had a 300 lb chopper for the pork. I could chop 300 lbs commercial style in 2 minutes. But now i see how to make it at home with the help of your video. all the best.

Ant, you and Val did a great job! Nice, fun, entertaining good home cooking video! The braciole looks amazing!! Nice, creative yet simple and certainly delicious recipe. I bet it was excellent. How did you cook and then serve it????? (btw great kitchen)

Love pork bracioles. But as a sound engineer in a recording studio, you need to drop the background music (very distracting) and you need a personal mic clipped on your shirt collar. Your voice is bouncing off the kitchen tiles and the counter tops. Also the focus should be more on what you’re doing instead of just you.
