OMG - this was awesome, and when he separated the two halves, I instantly wanted to snatch up that little piece in the middle and bite it! (Just the way he did, but I would have been far less elegant at it!) Have done this, once and very long ago (in 1980), with an entire wheel of Jarlsburg. And I can assure everyone, it's far easier with a BIGGER knife!
