Good Morning, I prefer Agar Agar. If the Yogurt is thick enough for you then you don't need to strain but it isn't called Greek yogurt.

It is not compulsory to add jam beneath your yogurt. There are also many cultures you can use out there. Danisco, chr hansen, bulgaricus. You just need to know how to use them
