I connected my back flip drain into the hot sap line going to the float box & placed a valve in the connection. This allows me to drain my back flip directly into the float box at the end of the boil. I drain the preheater after every boil to prevent freezing.

Yes, one benefit of stainless steel is that it is non-porous and cleans more absolutely than any plastic. By keeping your spouts clean, you reduce the bacteria that triggers the tap holes to heal. Also, correct, the Forever Spout liberates you from any internal check valve which would make cleaning more difficult. A gummed up check valve is only going to work against you. I just bought a dauntless divided pan evaporator and I was wondering how you moved your sight glass to your draw off fitting. Do you need a high temperature plug to change it out?

I have your head tank, and it fits my process except for one thing. I do not use the automatic feature as part of my usual process. I use the automatic switch as a "backup." I discharge my concentrated sap from my RO directly into this tank. It might be on a second pass. If the head tank gets low, it will turn on a pump and directly pump in either first-pass RO sap or original sap and fill the tank up. That keeps me safe from running out of fluid in the evaporator. My problem is that I did not watch the sap level in this tank, and it overflowed from the RO process. It was a big mess. I now watch that sight glass level as a matter of routine, just like I watch the sight glass levels of the two float tanks. It has never happened again. But there is no electronic grounding of the head tank. The switch became submerged and electrically comprised, which allowed me to get a buzz. I replaced the switch. Could you place the switch above the level of the tank and, therefore, not allow it to become submerged? It would be good to bond the tank to the ground. Your products have made our syrup production so much easier!

How much does the forced draft improve your evaporation from 12 gallons per hr.

On your flat pan or divided flat pan Dauntless the evaporation rate will go from about 12gph up to about 15gph-16gph. However, there are other major advantages. You will not have to split your wood nearly as small, the wood can be less than perfectly seasoned, and startup and shutdown will be much faster.

Didn’t see any mainlines? All laterals end up in your tank? And how do you drain the tank to another tank maybe on your truck to the evaporator.

No mainline needed. 5/16" home runs to the tank with quite a bit of slope down. Anywhere between 10 and 20 taps per line. Works fantastic and so simple. I use a small submersible pump to pump the sap from that tank into the tank on a John Deere Gator to haul it out of the woods.

The Dauntless is a brilliantly designed evaporator! It covers a super wide range of experience levels from entry level backyard setups to guys like me who need to nerd out at a very reasonable price. Mine is set up with the previous high efficiency pan set, float box w/sight glass and force draft. For a baby evaporator it absolutely rocks!

Does the sap in the drop flues get wasted? How does that sap get removed? Any help would be appreciated as this is my first using the drop flue pan and burned my first batch yesterday.

Normally, at the end of the season, the sap from the drop flues and the rest of the pan system is drained and finished on a stovetop pan, but sometimes a burned-out producer will just dump it. Some pans have a drain manifold, but others have to be siphoned or pumped out...

After a boil or a whole season we have virtually no ash in our Dauntless anywhere. Burning dry, correct size and species is important. We’re running beautiful, dry pine.

The Dauntless is awesome. We're running 50 taps +/- with flat pan & no blower. In our 5th season & definitley hitting well above 12GPH. 14.5 the highest so far w/ good dry wood (pine). You won't be disappointed with this or any other smoky lake product. Quality stuff.

FWIW, diatomaceous earth, shortened to DE, is a type of powdered stone and therefore it’s inorganic. However, it’s approved for use in organic food production. I thought some people might find that confusing.
