Featured Recipes: EMPEROR’S SAFFRON CHICKEN Ingredients Chicken cut into 16 pcs 1 kg Saffron soaked in ¼ cup hot milk ½ tsp Onion chopped 1 cup Ginger garlic 1 tbsp Green chilies 3 Water ¼ cup Oil ½ cup Salt 1 ½ tsp Allspice 1 tsp Cardamom powder ½ tsp Yogurt ½ cup Crushed red pepper 1 tsp Mace ¼ tsp Nutmeg ¼ tsp METHOD In a blender, ground onion, green chilies, ginger garlic and water to a fine paste. Heat oil, fry the blended mixture with salt, crushed red pepper till oil separates, add in allspice, cardamom, mace and nutmeg with whipped yogurt mixed with saffron milk, cook for 5 mins, add in the chicken, cover and cook till chicken tender and mixture is thick, serve hot with plain rice or paratha. SHAB DEGH Ingredients for Koftay Mince ½ kg Ginger garlic 1 ½ tbsp Onion chopped 1 Green chilies big ones 3 Poppy seeds 1 tbsp Nutmeg ½ tsp Mace ½ tsp Fennel seeds 1 tsp Raw rice 1 tsp Salt 1 tsp Cumin powder 1 tsp Chili powder 1 tsp Allspice 1 tsp Coriander powder 1 tsp Brown onion crushed 2 tbsp Yogurt 2 tbsp Hot oil 4 tbsp METHOD FOR MINCE Take out mince from mincer twice, chopperise ginger garlic, onion and green chilies, add this masala to the mince and grind once again, mix well, grind together poppy seeds, fennel seeds, raw rice, nutmeg and mace very finely, add in half quantity of this with salt, chili powder, allspice, roasted and crushed cumin, coriander powder, brown onion, hot oil, unbeaten curd, mix all well, make into koftas and keep aside. Ingredients for Gravy Oil 1 cup Ginger garlic paste 1 tbsp Salt 1 tsp White cumin crushed 1 tsp Coriander powder 2 tsp Chili powder 2 tsp Turmeric a pinch Ginger julienne 2 tbsp Brown onion crushed 3 tbsp Yogurt whipped 1 ½ cup Mixed whole spices 1 tbsp Black cumin ½ tsp METHOD FOR GRAVY Heat oil, add ginger garlic paste with salt, chili powder, turmeric, cumin and coriander, fry well adding half cup water, mix brown onion and yogurt, and add to the gravy with half cup water, fry till oil comes on top, add thick chopped pcs of 2 carrots, half cup water, fry for 5 mins, take out carrots, keep aside. Now add to the pan 2 cups of water, when water starts boiling, add koftas, cook covered shaking the pan for 15 mins, add leftover masala, cook on low flame, add carrots again, ginger julienne, sprinkle coriander leaves, serve with nan. Perfect For: ✔️ Lovers of rich and royal Mughlai cuisine ✔️ Special family dinners and festive occasions ✔️ Those who enjoy slow-cooked, aromatic meals
