I'd suggest by starting with your local rod & gun club. It might take a while, but they can be a massive resource. Alternatively, you can look up guides (there are a few along the coast, particularly in Maine) to get started earlier. Finally, you can always go into your local hunting store (Cabelas or, preferably, smaller shop) and just ask for suggestions. Good luck!

Some of the guys eat them and just avoid the liver, their thought process is that the liver has a higher concentration fo the chemicals. I ate a bit out of principle but found it too gamey and usually traded with some buddies for larger game meat. Good luck!
