After the first dip of the nut string do you reheat the remaining grape/flour mixture or do you need to remake it each time? I've been to Greogia and tried the real thing! We even made them on a food tour!

Do I need to add water? I’ve seen videos where people add ice cubes to recoup the lost moisture, is this needed?

No need to add water. Water or ice cubes added at the end of cooking would be more to halt browning abruptly, not to recoup any moisture lost (which is minimal). If you take the butter off heat and remove from the pan quickly enough, this eliminates the need for water/ice.

Exactly this! Also - I live in a country where corn syrup is very difficult to find and only really available at international supermarkets at an inflated price. And this is the case for most people outside of North America :)

This is THE caramel recipe that I've been hunting for. I added vanilla extract after the cream and butter mixture (can probably add it with it but it was last minute). Took forever to come up to a boil and had to keep wiping the sides

@NoFrillsKitchen think I spoke too soon, after I poured them into the pan and felt them set the bottom was a bit grainy. May have cooked it a little too long or there were still crystals that weren't dissolved

Sorry to hear that- that will be because your syrup crystallised before adding the cream mixture. That could either be from agitation or from undissolved sugar granules

When I was taught to make khinkali (in Georgia by a Georgian), egg was included in the recipe. I like it in there as it increases elasticity and makes the wrappers a bit nicer to eat. Using hot water allows the flour to hydrate more easily and can contribute to faster gluten development - I find it works quite well.

Actually you didn’t do it the correct way. The most important when it comes to eggplant you have to fry it on the pan till the eggplant’s blackened. Almost burn it, it tastes amazing after sometime.
