Love the video, im just getting in to producing as i have a olive farm now in spain, i get most of how to do it, until you get to the centrifuge part, how does the oil and water seperate for the extraction part, does the oil go up and the water goes down ? . im looking at getting a mini mill that does the job, it gives me a choice of cold or hot press. which trying to find out best version as i see only cold pressed.

Thanks, it was around 3 to 4 meter depth max, you need to find a right type of ground for Whiting (weedy and sandy bottom) and then Burley well!

Correction Frantoio is the cultivar and a principal raw material for Italian olive oils from Tuscany not Spain. Frantoio is fruity, with a strong aftertaste

Thanks for the video but, please either don't add music or, play it at a much lower volume. You speak quietly, which is nice, but it meant that often your voice was quieter than the music. Very frustrating and quite triggering for some of us. 😊

People do not realize this but fresh vegetables in olive oil is botulism waiting to happen. Yeah yeah yeah, a hundred grandmas have made it this way but I guarantee they experienced sickness along the way and didn’t know what it was and how fortunate we are today that we have SCIENCE and KNOWLEDGE to know better.

Thank you very much for highlighting this fact , you are correct about it. However, this bacteria is not grow in salty and low PH media. This eggplants pickle has still relatively high salt content and low PH (2-3), then this pickle is quite safe from botulism. However, it is always good to be careful and do not keep them for long or shouldn't store them variable temperatures.

Never boil eggplant they become soft mushy slime and lose they firmness , Happen to me just to follow a YT recipe , my methods is after cut live under salt 24 hour with a very very weight on top Then squeezed and put on vinegar for few hours again with a weight on top squeezing them again and jar them
