Imho you are overthinking it. Chopped tin tomatoes, chopped garlic, carrots, onions and celery and mince. Salt pepper oil red wine and origano. You dont need the billions of spices and things you mentioned. Plus regular mince (I prefer pork and beef mixed) gives tons of flavour no need to worry about skimming. For a 5 min ingredients prep and a tad of stirring you get something delicious without needing the pre made sauces you put in (which contain tons of sugar)
