Tried this yesterday. Tasted fine, but i tried (and hoping to like) your reverse spatchcock method, but found it much more difficult to carve and I believe it dried out the breast (even though I was careful to limit it to 160°). I'll stick to removing the backbone.

I am a long time fan of yours Dan. I have been using your Chicken Tikka Masala recipe (from your book 'The Curry Guy) for many years now. I have tried other recipes which were all pretty good, but I still go back to yours most of the time (probably because I know it off by heart now, lol). I also use your base curry recipe and your mix powder recipe and some of your other spice mixes. Keep up the good work Dan, you are a star.

Hi Dan, thank you so much for this video. I followed your Massaman paste recipe and then this recipe, and I cannot believe how amazing it tasted. It fed two people, plus gave me three generous lunch portions to take to work. Today I had it on its own without rice and it was just amazing! Quick question, do you sear your beef before cooking? Also, if I wanted more tender meat would I just leave it simmering for longer? Thanks

No, they are not made dry to send abroad, they are made like that so when you fry them they get crispy. You can also microwave them. No oil needed. You have to dry them for along time in the sun. Or they wont become crispy when you fry them. You also have to roll them out very thin. Yours is thick. Please say poppadoms not poppad. You tell that to an Indian, he or she will look at you strangely. Good Day.

This base source is legit, i regularly batch cook this and freeze it. I love in an area with poor choice in curry houses so just follow your recipes in the curry guy bible. Finally some spice in my life. Thank you.
