We fry carp. Scale and fillet. Skin side down..... Hassleback the fillet not going all the way through. Dredge and fry. This method makes the bones small enough to eat without hassle.

Once i meet fisherman middle age guy, he complains about hour nothing bite his bait, i curious what he use for bait, it’s really shock me, he use minnow for bait, he use it like fishing cat fish or something, he throws it and waiting some fish to bite it, so i explain it to him, now he understands how to use minnow.

In Germany they are used for Thanksgiving. My grand mother was German and we used carp from the Missouri River caught by commercial fishermen. Bleed it while its heart is still beating.

Edible? Carp is one of the best tasting fish, only bested by crucian carp and catfish. And I don't understand why people keep destroying nice fish by filleting it. It's very simple. Descale it, cut the fins off, then the head, then cut the fish in half along one side of the spine, cutting through ribs as you go, and then portion it. That's all. You then lightly flour it and you pan fry it, getting the skin crispy. And you then eat the meat right off the bone. People go crazy for pork ribs and chicken wings, but for some reason no one ever thinks about fish ribs. Try it, it's lots of fun and tastes better. As for the Y bones, it's easy. The back muscle has two halves to it. Split them up. Now take each half and split it along the length of the fish. The Y bones will all stand out. And you eat it with your hands, not with a fork. Franky, that tiny bit of fish you're left with at the end is the saddest bit of fish I've ever seen in my life. Find yourself a Romanian fisherman and asking him to show you how to prepare and cook carp.

I eat carp a lot, I live it Ohio almost every river or lake has them, a 4 or 5 pounder is about right, if you have a good knife and skill you can cut around that 2nd set of bones, just feel for them and take a thin fillet above them then pull them out and get a 2nd thin fillet, then cut out all the red meatyou will end up with 8 fillets of white boneless meat, then marinate in a very strong saltwater and soy sauce solution over night, I like to deep fry them in a cornmeal flour and cajan breading get the oil very hot and cook for 90 seconds, do not overcook, just until the breading turns a little brown, they taste great, the saltwater draws out the blood and fat and no need for any more salt while cooking

It really depends where you catch it and the time of year. Of course knowing how to properly clean and cook it makes a huge difference as well.

I have had great luck with all curly tails, smaller catches more. Have you ever used a bream killer, it looks like a tiny shaving brush kind of. Bass and Bream go nuts on it, its weird , almost zero action but they demolish them.

Carp is a common food in our country. You cooked it improperly by treating it like a tuna, which is a no-no. That's why it has a "dirty taste". It must be thoroughly cooked, best deep-fried and crispy and eaten with rice and vegetable soup or green salad. It is also cooked in coconut milk a la tom yum.

Carp & Catfish are actually a delicacy in many parts of Europe and MEast. You just have no clue how to cook fish. North Americans don't know how to properly cook fish all you guys do is soak food in sauce and seasoning.
