excited to see what u do next, gl man one way i got better at scripting was trying to make something complicated that i couldnt do already, like a soulslike game or combat system. then just force ur way through it. i ended up restarting that project like 4 times until i learned what parts of the game to make first. dw about getting bored or moving onto other projects either, just part of learning. could be good to start something new if ur slowing down.

technically, the built in roblox animator is not a plugin so you couldve done that (assuming you used scripts to make it)
