Very well done! Great explanation and video. I would personally use more chunky guachale and of course a good bit of cracked whole black pepper. I would also use a bit less water and salt for the water. You want starch and this cheese is rather salty.

Very good, just a little additional "secret" for the real fans of Italian food: Add a touch Heinz Ketchup in the end, for the same reason as you would ( mix your red wine with Coca Cola, to give it a hint of beautiful sweetness. Enjoy! 👌

You are wrong. Before ww2 there was no carbonara in Italy. The Americsn soldiers that freed Europe had Bacon with them. That was the birth if the Carbonara.

Same recipe I use, but I think I use way more Onion (proportionately) than you. Sometimes I cook it in the oven in a dutch oven low and slow. As usual, your chopping (mincing) is way finer
