They are pretty easy pits to learn on. Don't start with a brisket!! Cook everything else first. Learn you cooker first before you waste money messing up a nice brisket. What I like is the LANG produces very moist, juicy food. Cooks like a convection wood oven. Make sure you learn about "clean" or light blue smoke. I didn't understand this in the beginning. You don't want smoke flavor, you want wood flavor. This was an Ahaaaa moment for me!!!!!! bTW, If you can find it, go with OAK.

I’m in the market for a smoker and no matter the brand, get the 48” minimum. That’s still small enough to cook a few racks of ribs and large enough to cater a decent sized party.

As a Lang 36 owner for 8 years, I wish I knew then what I know now. Langs design is terrible compared to other offsets. The firebox is all wrong (way too claustrophobic and wrong placement in relation the pipe) and the air flow is just horrendous. You constantly fight to keep the fire going right because he just didn't build a pit that pulls as well as others. Watch it billow out of the back door here. That's not supposed to happen.

In my research, the Lang Smokers are reasonably priced. The smokers with all the options are much more expensive. Having said that, I am disappointed in my Lange 36" Hybrid Smoker. It is solid and the people at Lang were very helpful, but I would not have bought it if I had known some of the issues. First, the Hybrid model has a 36" smoker and a 36" BBQ grill built out of one long 72" barrel. I find that when just smoking, the heat is radiated to the grill side (and vice versa) causing loss of heat in the smoker. If you feel the barrel all the way on the grill side, it will be hot to touch. There is a thin piece of sheet metal separating the two inside the barrel. I find I have to feed more wood than I would have expected. Second, there are no ash pans on the firebox or the grill side. On the grill side you have to remove the grates, sweep the ash into a pile and then use pan to remove the ash. Some of the ash will fall out the bottom damper. The fire box has a heavy platform to raise the wood to get oxygen. It is difficult to remove for cleaning. Again you have to sweep the ash and remove it with a dust pan. Third, the grill side has two fixed grates that are not at a height that I find useful. The grill side is really large. You could put a whole bag of charcoal in the bed. I use a grill basket to keep a chimney-full of charcoal contained and raised to a point that you get searing on the meat. It is difficult to control the heat without an adjustment on the grates. One positive I have found is if you use charcoal on one side, you can smoke a whole chicken or two on the top rack. Unfortunately, it is difficult enough to use that I don't use it as often as I intended. If I had to do it over again, I would have just bought the smoker without the grill. The grill is very heavy, 750 lbs. It does leak air a little. I find that I have to attend the fire throughout the cook as it loses heat as I don't like putting on large wood sticks which can smolder. Finally, the Lang is decent for the price. The barrel is 1/4" sold steel. I might have felt differently if I hadn't purchased the hybrid model.

As a Lang owner for 8 years, I think it's interesting that Ben's old instructions on starting a fire in his pit is very wrong. Not a little wrong.... VERY wrong. That 36, cannot handle a fire that big. You're going to have to choke the fire down and then bounce back the other way. The coal bed will be too big and unless you are cooking 325+, every log you put in will screw your Temps until the coal bed is gone and then you are going to pull your hair out messing with the dampers again because you choked them down so much to deal with the fire that was too big for the cooker.

@@worldtravel101 the one thing to remember on a smoker is to keep its clean from ash in the firebox they will rust easily. It's good practice to spray the outside of the firebox and every now and then the entire smoker with pam or I use walmarts cheap canola oil spray. And always remove the ash out of the firebox at the earliest. An ash pan is a wise investment for a smoker.
