Do you think dancing on grass or uneven surfaces are good for balance and avoiding tripping hazards?

YES! It CAN be helpful to improve balance. Of course, safety is always a part of the equation. Being clear about what limits currently are for yourself, and using tools that keep you safe (using a dance partner, or maybe doing this with poles or a hand on a chair or other surface), moving more slowly and deliberately at first, and more. It's also great to be clear about your reasons for tripping/loss of balance. Is it fear? Is it weakness, vision changes, or lack of sensation in the feet? Once you are aware of your body and its needs, it helps to know how to proceed to challenge it to optimize!

Hi, sometimes I see Judy starting her first step on the bass.. and later on in the video (when she turns her back to the cam) she is starting on the clap/snap.. which convention is leading at the moment in the steppers community?

I teach and I lead. I will always start on the left which is 1& 7 which is the lead for men and the 1 for woman in a basic start you can start on the 7 as well it dependson whos teaching but both way are correct.
