You can tell just how long ago this was by the avocado appliances (that and harvest gold, plus shag rugs were in fashion) and the ton of salt people used back then! Great memories.

I spent my 'sick days' as a kid watching PBS cooking shows like Justin Wilson and Yan Can Cook (and Julia Child, obviously) along with Sesame Street and Electric Company. One of the funniest JW moments I can remember was his Turtle Soup episode. He literally necked nearly an entire gallon jug of wine while cooking. Every few minutes it would be "a splash for the soup, and a splash for me" (or something close to that).

This brings back great nostalgia and memories of being around my grandma as we'd watch all these cooking shows early morning on pbs and we'd talk about all kinds of stuff from family history and her growing up on the old days. It was the best times of my life as a kid recalling cooking and baking with her and watching cooking shows and arts n craft shows.

Its my experience that all that Cajun crab is no good at all. All you ever taste is seasoning and theres no taste of the food itself.

Warning: Justin has some spices that today are hard to get. Today you might have to use the internet. Personally I don't like to use the internet in order to make food. I envy the day where you had to go to Louisiana without mail ordering it. The best part of Justin Wilsons food is 1. the food 2. the Music 3. anyone you tricked to drive them down to Louisiana for some good food and they paid for all the gasoline. 4. Mr. Wilson is a comedian first then he learned how to cook. End of Warning.

In the early 1980"s i had gotten laid off from my job. i took another job as a rural newspaper deliver. Monday thru Saturday it was a noon to 4 pm job. But Saturday I had to start at midnight to deliver over 400 papers county wide. Here in Tennessee, late at night we could tune in to WWL out of New Orleans on AM clear as a bell. WWL was a truck drivers' channel but every third or fourth song would be a comedy routine called a trucker's chuckle by either Justin or Gene Tracy. these kept me laughing and awake to get my job done,

As ya'll enjoys; Imagine cajuns inventing Italian pizzas. I hear that pizza from Italy is just as delicious as it was back in 1990 - 95. Have you ever cut into a Calzone and watched the egg just fill the plate so the meal can be dipped in yoke? I have a lot of questions about what Italy is like today.
