I cooked this last night but I added milk! It was brilliant. Seemed rather decadent and fancy but it was really very simple. Some cut up in coffee with ice was really good too and very visually pleasing.

Mirin is easy, you can sub with sugar. Dashi is a harder one - this is the essence, the heart of the dish. You can however make your own types of dashi depending on what you can get ahold of in your area - there's Dashi made from just kombu (seaweed), shiitake or katusobushi (bonito flakes). If you can't find any Dashi options, it is possible to use a seafood or vegetable stock powder but it won't taste the same. I hope this helps!

Oh really? We've always been served it with crushed ice. We'll have to try it out without it next round. Do you find it's too watery for you if you use it? We love how cold it makes it on a hot day.

We learnt this in Budapest from a father and son, passed down from his grandfather...so... not sure how we can get a recipe any closer to the source. There will always be different variations from area to area, family to family. If you make it different, that's okay. :) This is just how we were taught.

We used canned beans for this recipe, so didn't need to soak them. If you are using dried beans, yes you will. Or you can also pour boiling water over them and let sit for an hour, repeating this again if you want to do it quicker. :)

I just watched several of your recipes and most of them are awesome for my overall preferences to Asian foods. I don't quite get why you do not have 100 times more subscribers yet. Maybe longer videos showing more detail on each step might help with KZbin algorithm. I also like to hear the cook talk as it creates more of a bond with that channel that makes me want to watch more videos. Just some thoughts. Great video image quality by amazing chefs.

Super Marinade! Used it tonight on a Spatchcocked (Butterflied) whole chook. Magic! What with Fish & Soy Sauce already there, I think I'd be ditching any further salt in future... 😉

Oh great idea to use the whole chicken. You can definitely tone down the salt if you prefer, we find when paired with the sweeter / spicier nuoc mam it is balanced enough, but we do tend to like it on the saltier side. I blame Mum haha!

This is a pretty accurate version of the South Aussie Pie floater except the pie normally would be upside down! looks great though. They were traditionally available from a pie cart and served as street food. Just right for a cold winters evening.

Thank you! Haha yes, super contentious for us to serve it top side up - that's Sarah's fault. She loves the flaky pastry on top and doesn't want it going soggy in the soup. Although we assume by serving it upside down it is easier to cut through the shortcrust vs the flaky? It is fun to argue with our brothers every time we serve it that it's "wrong" 😜.

Definitely not fudge. It looks like it, but the texture and taste is quite different to fudge. It's more of a crumbly, slightly grainy texture that the velvety smoothness of fudge.

The sweet does help to balance out the other flavours - salty and sour etc, so we do recommend using some kind of sweetener if possible.

Magic Stuff, Wonderwomen ! The whole leaves on top is a great idea. I've been making red sauerkraut for a little while now and add one part grated beetroot to every five parts red cabbage. A very small peeled and finely diced apple also goes in... 😋

Nice work Bryan! Yeah next batch we had an alternative idea for cabbage, carrot, beetroot and a little ginger and fresh tumeric too. We'll have to try the addition of apple as well - I know that's quite traditional. Does it add a hint of sweetness or more a little zing once it's finished fermenting?

Half an hour!!! Eep - this literally takes 6 minutes. A couple of things may have happened here - not enough heat to thicken the flour or not enough flour to thicken the sauce until it evaporated. Definitely try again, and read through the full recipe to see if you missed anything key that may have caused that.
