nicely done plate there, i find they stay whitish instead of browning otherwise they can brown burn and crisp up i guess they need to be cooked on med low heat

A friend just gave me 2 of these roasts today amongst some other cuts. I was looking around to get some ideas to do with them. Definitely gonna smoke gonna smoke them over some chilli along with some ground venison. I've done it with beef and it was amazing. I'll smoke the roast until it shreds.

Here try something real good. Get a finger of saltines and a pack of powdered buttermilk ranch. Crush them crackers and mix that ranch in with them. Bread your fish like normal egg and flower then crackers. Cook in unsalted butter. Real butter not that grease in a bucket. Add a touch of lemon and wow. I would sooner smoke trout.
