You certainly can add citric acid if it needs it. If you can find the natural balance between fresh juice and sugar, that works too.

Chef, did you add 2 tablespoons caramel or how much?
@chefHawkesАй бұрын
I added a couple of heaping tablespoons to the ice cream to flavor it and then used the rest of the can to ribbon on the ice cream to make the caramel ripple.

how much whole milk?

When I say milk, I mean the cream and half and half (made from milk products) 😀

Yea degreaser doesnt work that good for the grease on our fryers. I had to ruin a knife on it just to get part of it off. Was 1cm thick on some places

Yeah, that’s how ours is right now. I’ve been looking for a video for my situation, but all of these grease cleans aren’t even that bad.

Let the boil run for a while (sometimes adding more water if necessary) as it gives an advantage to melt or soften everything down.

you have to treat it as restoration at that point, grind, chip, scrub that area first with metal, then apply degreaser if the layer is thin enough. You need to account heat as it will help soften the grim.

I am confused. In your recipe here you list Zest of 2 lemons TWICE and when I watch the video you are using BOTH lemon and Lime zests. AND>... 1 cup of lemon AND lime juice MIXED together for a total volume of 1 cup? OR is it.... I cup lemon juice AND 1 cup lime juice?
@chefHawkes2 жыл бұрын
Sorry, I corrected to lemon and lime zest. crazy Covid days fogged my brain! It is a total of 1 cup of juice. Thanks for watching.
