This hasn't worked out as planned. I measured everything out to the gram, and the temperature of the butter/milk mix was exactly 37c. Dough was mixed on low for 15mins in my Kenwood Titanium mixer, and left to rise for an hour in a warm part of the apartment - no rise - at all.

I made these just yesterday and brought them into my coworkers today. My recipe was different but the concept was the same. Most of them were in awe, shaking their heads in disbelief as to how good they were. Pro Tip: Use REAL maple syrup, not that high fructose corn syrup shit.

It could be the kind of gelatin you are using. Try to make sure you use a high grade gelatin, I usually try to use platinum grade. :)

I'm trying this too now but first time had the immediate problem of my tools clogging up and I couldn't get any colored gelatin into the base after the first plunge. Do you think my gel/food coloring was too cool and it caused the clogging? Any thoughts?

It could be your food gel, when the jelly gets too cold it clogs. But if you just pop it in the microwave for a couple of seconds, give it a stir, it should turn back to liquid!

The hot sugar will partially cook them. You can use pasteurised egg white if you prefer.
