Olympic Chocolate Muffins! These chocolate muffins served in the Olympic Village are going viral and I had to make my own version. Turns out they are fairly simple to bake find the recipe below … In a large bowl whisk together; 1 1/2 cups flour, 1/2 cup cocoa powder, 3/4 cup sugar, 1 tbs baking powder, 1/2 tsp salt, 1 cup chocolate chips, 1 cup milk, 2 eggs, 1 tsp vanilla, 1/2 cup oil until smooth. Scoop into a cupcake pan with cupcake liners and bake at 350 degrees for 14 minutes or until a toothpick inserted into the center comes out clean. While the muffins cool make the chocolate ganache by warming 1 cup of heavy cream in a sauce pan over medium low heat until it comes to a slight simmer. Pour the warm cream over 1 cup of chocolate chips in a heat safe bowl. Let the two sit for a few minutes and then stir together until smooth. Once the muffins are completely cool, gently push in the center of each one to make a small divot. Use a piping bag or small spoon to fill the center with chocolate ganache. Enjoy!

I had shaved ice in Hilo and it was sooo good. It had the shaved ice and ice cream and condensed milk and it was delish!

I recommend when you’re there before the party starts you go on the rides that have the least waits but when the park closes for the public, you go on the rides with long waits like incredicoaster and guardians. Also if you want to go on incredicoaster go at night, the violet forcefield tunnel is so cool!

My family and I were just on the big island about a month and a half ago! We stayed mostly on the Hilo side cuz that is where my brother lives. I loved the beaches and tropical feeling of Hilo and don’t even get me started on the yummy lilikoi flavored shaved ice!

Homemade Caramel Corn! In a large pot add 1/4 cup of vegetable oil and 2 popcorn kernels. Once they pop you know the oil is hot enough for the rest. Add 1 cup of popcorn kernels, stir and cover the pot. Shake the pot over medium heat every 1-2 minutes until the popcorn has finished popping. Note! If you use microwave popcorn you’ll need 8-10 cups. Spread the popcorn onto baking sheets lined with parchment paper. In a small sauce pan melt together 1 cup brown sugar, 1 stick of butter and 1/2 cup light corn syrup. Bring to a boil for 5 minutes. Add 1 tsp of salt and 1 tsp baking soda. Drizzle the caramel on the popcorn. Drizzle a little at a mix and toss to coat the popcorn as you go. Bake the caramel corn at 250 degrees for 35-40 minutes. Let it completely cool before you break it apart and enjoy!
