Great video! What is the maximum time you work on a cookie and keep it outside? Can you take a break between layers and put the cookie in an airtight container then continue working on it?

I made this icing and I love how fluffy and cloudy it is, I had no issues with cratering when it dried. It’s amazing! However, it didn’t set well for me. It dried but it wanted to disintegrate if I barely touched it. Could it be I need to add more meringue powder? Or maybe adjust my amount of corn syrup? I followed your recipe exactly as you posted it. Please Help! (I live in southern Louisiana). I can’t be experimenting when I have cookie orders.
